The end of year celebrations are approaching! Who says Christmas, says family meal around equally tasty and delicious dishes. You haven't concocted your holiday menu yet? The Bistro de Beaulieu gives you an idea of ​​an original dessert in the shape of a Christmas tree!

A recipe suggested by Laurice Besson from Beaulieu Bistro at Riorges.

Ingredients:
  • 400 g whipping cream, 
  • 400 g of cheese cream,
  • 95 g of sugar,
  • 6 g of gelatin,
  • 1 lemon juice and zest,
  • 250 g of speculoos,
  • 70g of butter.

Melt the butter and chop the speculoos powder, mix the 2 preparations together and line the bottom of your mold then pack well. Place in the fridge for 15 mins.

Then, whip the whipping cream very cold to obtain a frothy mixture (not too firm). Beat the cheese cream.

Cool the gelatin in cold water. Zest and squeeze the juice from the lemon. Once all these elements are ready, we move on to the mix:

  • Add the lemon juice to the gelatin and heat to melt it, 
  • Relay this preparation with a spoon of “cheese” cream,
  • Then mix everything together, letting the preparation air.

Then, fill your tree-shaped mold with this preparation. Place in the freezer for 12 hours for the cake to set well.

A few hours before the tasting, unmold the cheesecake and decorate as you wish. For example, it goes very well with red fruit coulis or caramel sauce.
