A great classic of French gastronomy, frog legs can be eaten in many restaurants in Roanne. The restaurant Le Relais du Château reveals the recipe to us while keeping a part of mystery. Follow the advice of the chef, Valérian Lamarche, to taste delicious frog legs with butter, parsley and garlic.
A recipe for 4 people proposed by the restaurant The Castle Relay in Saint-Priest-la-Roche.
- Milk,
- Plain flour,
- Frog legs (about 300g per person),
- Butter,
- Garlic,
- Parsley.
Place the frog legs in a bowl and cover them with milk.
After this milk bath, drain them and roll them in flour. Then sift them well.
The frog legs are ready to be browned in a magic butter-based potion, kept secret by the chef.
Prepare the parsley. Rinse it and chop it very finely.
To finish, sauté them in a large amount of butter with parsley and garlic. Season to your liking.
